In early 2002, Luis Jesús Gómez Fitch, at the time in Jamaica and Steven Miotto in Los Cabos, decide to join forces and make the dream of creating in Puerto Vallarta restaurant recreates the flavor and warmth of Mexican cuisine rescuing ancient traditional recipes that distinguish the culinary heritage of our country.

 

Always looking to maintain a standard and superior quality, to make the experience of Mexican cuisine an unforgettable experience, began to create different dishes to satisfy the most demanding palates, both national and international. So they came into the kitchen which currently offers the restaurant, a menu of Mexican cuisine constantly evolving, ranging from pre-Hispanic roots brought the New World during the colonial period until the inclusion of the latest Mediterranean, Continental, Caribbean influences elements Oriental.

 

They were then given the task of creating the ideal environment, combining in a space similar to the tones of our land with born ornamental pieces inspired by Mexican artists shades, creating an atmosphere of understated elegance, perfect setting for culinary selection The Xitomates offering.
